Cut 1 green onion in half lengthwise and then chop into pieces. Cut 100 g of garlic scapes into 1.5 cm pieces. Chop 1 Cheongyang pepper. Add enough cooking oil to make fried eggs. When finished, set them aside.

Without washing the frying pan, add 1 tablespoon of chilli oil. Add chopped green onion and stir-fry until fragrant. Add 1 tablespoon minced garlic, 1 teaspoon minced ginger, sliced Cheongyang pepper, and 3 Vietnamese peppers and stir-fry.

Add 200g minced pork, 1 tablespoon cooking wine, black pepper powder, 1 tablespoon fish sauce, 1 tablespoon oyster sauce, 1/2 tablespoon of chili bean sauce and stir-fry. Then add chopped garlic cloves and stir-fry while mixing.

Place garlic scapes with pork on top of the rice and top with a fried egg to make a delicious garlic scapes rice bowl with pork.
