di san xian(地三鲜) is a Chinese dish. disanxian means three fresh ingredients from the ground. The three ingredients are eggplant, potato and green pepper. Today, I will cook disanxian using these three ingredients, oyster sauce, and chili bean sauce.

Servings 2: 1 eggplant, 1 green pepper(paprika), 1 potato, 2 green onions (small), 2 tablespoons of starch, 1 tablespoon of minced garlic, 1 teaspoon of chopped ginger, 1 tablespoon of chili bean paste, 1 tablespoon of oyster sauce , 1 tablespoon sugar, 1 tablespoon cooking wine, starch dissolved in water

Prepare cooking oil for frying eggplants and potatoes. Then, add the prepared eggplant and potatoes in turn and fry.

Add a generous amount of cooking oil. Add chopped garlic, chopped ginger and thinly sliced green onions and fry. When it’s all yellow, add fried eggplant, potatoes and green peppers(paprika) and fry together. Then add 1 tablespoon of sugar, 1 tablespoon of chili bean paste, and 1 tablespoon of cooking liquor. Stir-fry all ingredients, then pour the dissolved starch in water to adjust the consistency. And stir them well, it’s done.
