Today we are going to make mala chicken stir-fry soup. Let’s make our own mala sauce instead of the regular chicken stir-fry soup sauce. If you make your own mala sauce, you can adjust the spiciness and adjust the seasoning according to your taste. So, shall we try making it together?
MALA SAUCE AND MALA CHICKEN STIR-FRY SOUP ingredients
2 tablespoons Sichuan pepper, 2 tablespoons Majiao, 3 star anise, 3 tablespoons red pepper powder, 3 tablespoons chili bean sauce, 3 tablespoons Laoganma sauce, 150ml cooking oil, 1/2 green onion, 10 Vietnamese peppers
1 chicken (pre-cut), 1 potato, 1 sweet potato, 1/3 carrot, 1 onion, 600ml water, 1 tablespoon soy sauce, 1 tablespoon sugar, 1 tablespoon five spice powder, 1 tablespoon oyster sauce spoon, 1 to 2 tablespoons of fine red pepper powder

Lightly blanch the washed chicken in hot water, then rinse thoroughly in cold water. This will get rid of the bad smell of the chicken.

Add 150ml of cooking oil, add chopped green onions, and fry. Then add 2 tablespoons of Majiao, 2 tablespoons of Sichuan pepper, 3 star anise, 10 Vietnamese peppers, and 3 tablespoons of red pepper powder and stir-fry.
You get chilli oil by filtering it through a mesh. Add 3 tablespoons of chili bean sauce and 3 tablespoons of Laoganma sauce to red pepper oil and stir-fry to make mala sauce.

Add the poached chicken, sliced potatoes, sweet potatoes, carrots and onions. Add 3 tablespoons of mala sauce, 1 tablespoon of five spices, 1 tablespoon of sugar, 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, and 600ml of water and bring to a boil.

In the middle of boiling, taste the seasoning and add red pepper powder and mala sauce to your taste and boil it to make a delicious mala chicken stir-fry soup.

Mala Chicken Stir-fried Soup is ready. The regular stir-fried chicken soup is also delicious, but the spicy taste of mala is really delicious. I like spicy, so I added more red pepper powder and mala sauce, and it goes well with rice and goes really well with alcohol.
