Coconut noodle may be a bit unfamiliar to Koreans, but it is a type of noodle often eaten in Myanmar. Coconut Noodle ingredients
For 3 servings:
1 liter of water, 500 ml of coconut milk, 2 teaspoons of liquid chicken stock, 1 cup (200ml) of soybean powder, 2 chicken breasts, 2 tablespoons of fish sauce, 1 tablespoon of turmeric powder, 1 tablespoon of red pepper powder, salt,
1 onion, 2 tablespoons minced garlic, 1 teaspoon minced ginger, 1 tablespoon lemon juice, 1 tablespoon sugar, 1 tablespoon chicken powder, 3 boiled eggs, corn cookies, 3 servings of fresh frozen noodles
Coconut Noodle Recipe

Add 2 teaspoons of liquid chicken stock and 1 cup (200ml) of soy flour to 1 liter of water and mix well.

Cut 1 onion in half, then finely chop 1/2 and thinly the rest. Cut the chicken breast into small pieces. Thinly slice the boiled eggs.

Add a generous amount of cooking oil, add 2 tablespoons minced garlic and 1 teaspoon minced ginger and saute. Add 1 tablespoon of turmeric powder and 1 tablespoon of red pepper powder and stir-fry while mixing.

Add the sliced chicken breast and stir-fry. Then add 2 tablespoons of fish sauce and stir-fry. Then pour in 500ml of coconut milk and bring to a boil.

Pour in the water mixed with soy flour and chicken stock. Then add 1 tablespoon of lemon juice, 1 tablespoon of sugar, and 1 tablespoon of chicken powder and bring to a boil to complete the broth.

Blanch the frozen noodles in boiling water and place in a bowl. Pour in the broth and top with the cut eggs and onions. Add corn cookies or coriander to your liking to make delicious coconut noodles.

It took a little effort, but the coconut noodles were really delicious. It tastes almost identical to what you eat in Myanmar. The broth is soft and rich in flavor.
