Add 1 tablespoon of chicken powder, 1 teaspoon of pepper powder, 1 tablespoon of oyster sauce, 1 tablespoon of Chinese chilli sauce, 2 tablespoons of oligosaccharide, 8 tablespoons of tomato ketchup and 200ml of water and mix well to make the seasoning. Make a starch solution by mixing 1 tablespoon of starch with 2 tablespoons of water.

Cut the washed snapper and sprinkle with salt. And spread the potato starch evenly.

Add enough cooking oil to submerge the snapper and fry the snapper at about 150 degrees Celsius. Pour cooking oil into the snapper with a ladle and fry. Fry until golden brown and then remove.

Add 4 tablespoons of chilli oil. Then add finely chopped green onion and fry. Then add 1.5 tablespoons of minced garlic and saute together.

Add the sliced carrots and onions and saute. Then, add chopped cheongyang pepper and red pepper, stir-fry, and then add the prepared seasoning. When the seasoning boils, add starch water and mix.

Pour the seasoning over the fried snapper. Then, add long slices of green onion to complete the delicious sweet and sour snapper.

Crispy on the outside, soft on the inside and so delicious. It goes so well with the spicy sauce. It would be great if you make it when guests come. It goes well with rice, but it seems to go better with alcohol. It’s a bit daunting to cook at home, but I think it’s worth a try.
