Coconut Ice Cream INGREDIENTS
500ml coconut milk, 6 tablespoons sugar, 1/4 teaspoon salt, 1.5 tablespoons cornstarch, 1 handful cashew nuts (peanuts)

Place cashew nuts or peanuts in a frying pan and bake without cooking oil.

Put 500ml coconut milk, 6tbsp sugar, 1/4tsp salt and 1.5tbsp cornstarch in a pot and bring to a boil over low heat, stirring. Make sure no air bubbles rise and stir until thickened.

Place in a plastic pail and freeze for about 3 hours. After 3 hours, take it out, stir well and freeze for another 15 hours.

Crush the frozen ice cream and place it in a blender to grind.
Place back in plastic container and freeze in freezer for 6 hours.

After 6 hours, scoop out the ice cream and top with roasted cashews to make delicious coconut ice cream.
